I have a confession to make. I’m a huge Game of Thrones fan. Which is kinda funny to me because I’m honestly not much for fantasy. Or violence. And Game of Thrones has plenty of both. It’s one of the few shows that both my spouse and I love.

Well friends, Season 8 is almost upon us. I can hardly wait!

I thought it would be fun to celebrate the occasion with a themed dinner, and after reading The Longevity Paradox, I’ve been motivated to add more mushrooms into my diet. (Page 195)

This recipe for my Wildling Wild Mushroom Tart is such a treat. Delicious wild mushrooms, fresh thyme and sage, and caramelized onions held together by a savory custard. Plus it’s a Game of Thrones themed recipe, so you can’t go wrong!

For the crust, I wanted to give you some options. Some people can’t have nuts, some people don’t care for the taste of cassava or coconut, so there’s no one crust for all.

Please use your favorite, Plant Paradox compliant crust.

If you’re looking for a good crust recipe, here are a few to choose from:

Almond flour pie crust (omit the Swerve sweetener)

Cassava flour pie crust (use butter)

Wilding Wild Mushroom Tart Recipe Notes

I decided to use wild mushrooms to go along with my Game of Thrones theme. You can really use any combination of mushrooms here. I’ve made this recipe before with just basic white mushrooms and it turns out just as good. Wild mushrooms can be a bit pricey, depending on where you are located, so feel free to substitute whichever mushrooms you’d like. It won’t affect the taste.

For the cheese, I used a gratedParmigiano Reggiano. You could also substitute gruyere, Swiss cheese, or even goat cheese. (I’m personally not a fan of goat cheese. I keep hoping my taste buds will change, but every time I try it, it reminds me of the way a goat smells. Am I the only one who feels this way?)

For the herbs, I used fresh thyme and fresh sage, but you could substitute dried versions. (I would do half as much dried herbs as they are more potent than fresh).

This wild mushroom tart would also make an elegant appetizer for a holiday or party. To make tiny tarts, I would use a mini cheesecake pan with removable bottoms. Just make the pie crust dough and press into the mini cups.

Wildling Wild Mushroom Tart.

This Game of Thrones inspired recipe is the perfect way to celebrate season 8. You will love this decadent, vegetarian mushroom tart.

Ingredients

  • 9 inchprepared pie crust
  • 1mediumonion, thinly sliced (about 1.5 cups sliced)
  • olive oil
  • 1tbspbalsamic vinegar
  • 8ozsliced mushrooms (I used a mix of cremini, oyster, sh*take and portobello)
  • 1tspfresh thyme (remove leaves from stem)
  • 1tspfresh sage, chopped
  • 1/3cuporganic cream
  • 1largeegg
  • 2largeegg yolks
  • salt & pepperto taste
  • 1/4cupgrated Parmigiano Reggiano cheese
  • additional sprigs of thyme as garnish, optional

Instructions

  1. In a skillet over medium-low heat, place 2 tbsp of olive oil. Add sliced onions, and stir over low heat until onions start to caramelize, about 15 minutes.

  2. Add in a pinch of salt, and the 1 tbsp of balsamic vinegar, and continue to stir for another 5 minutes.

  3. Place caramelized onions in a bowl to cool

  4. In the same skillet, add in another 2 tbsp of olive oil, and turn heat up to medium. Add mushrooms and saute for a 2-3 minutes.

  5. Sprinkle in a pinch of salt. This will help the mushrooms release their juices. Continue to saute for another minute.

  6. Add a splash of water to deglaze the pan, and add in the thyme and sage.

  7. Continue cooking for a few minutes until mushrooms are cooked and no longer releasing their juices.

  8. Preheat oven to 350 degrees.

  9. In a small bowl, whisk together egg + 2 egg yolks, 1/3 cup of cream, 1/4 cup grated cheese and salt & pepper to taste.

  10. Remove prepared pie crust from the fridge and line tart pan or 9 inch pie plate.

  11. Layer the caramelized onions on top of the pie crust. Top with wild mushrooms, and then pour the custard mixture on top.

  12. Bake in preheated oven for 25-30 minutes until custard is set and cooked through.

  13. Let cool slightly before serving.

Other ideas:

The caramelized onion and wild mushroom filling would be delightful in a lot of ways. If you didn’t want to make a pie crust, you could also use it as a filling for your omelet, or as topping for a pizza. It would also pair well with chopped chicken and cream sauce in a casserole. The ideas are endless!

Q: Can you freeze a wild mushroom tart?
A: Yes! These mushroom tarts freeze beautifully. You’ll want to bake it and let it cool, before wrapping up in freezer paper and freezing. When ready to serve, thaw, and warm up in the oven at 350 degrees for 15-20 minutes.

Q: What do you recommend serving with a mushroom tart?
A: Because this is a decadent and rich item, I think it pairs well with a simple arugula salad dressed with lemon juice and olive oil.
