Why You Will Like This Recipe

This soup typically includes ground beef, tomatoes, onions, garlic, and Italian herbs, all simmered together with beef broth and broken lasagna noodles.

Lasagna soup is then topped with a generous dollop of ricotta cheese and sprinkled with mozzarella and parmesan cheese. It's a perfect dish for a cold winter night or anytime you're in the mood for a delicious and satisfying meal.

Lasagna soup is one of my top 100 recipes on this site! It is lasagna in soup form and a reader favorite. I will sometimes heat up some Texas toast (Lite) and use that to dip the soup in if I have enough points left over for that.

I like to make this lasagna soup during the Winter months here. It helps me get through the dreadful and super cold awful months of January and February in Fargo, ND. My mom sometimes jokes about how whenever she makes lasagna, her lasagna is so soupy. Well, guess what Ma? Mine is too. 🙂

Ingredients Needed

Easy Lasagna Soup - Recipe Diaries (2)
  • Onion, chopped (yellow or white)
  • Lean ground beef Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
  • Garlic, minced - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
  • Crushed tomatoes - or store bought marinara sauce can be used.
  • Dried oregano - Is a common herb used in cooking, particularly in Mediterranean and Mexican cuisine. It has a pungent, slightly bitter taste and a strong aroma
  • Low-sodium chicken broth - Some people prefer homemade stock, which allows for control over the ingredients and seasoning. Othe rs prefer store-bought stock for convenience.
  • Lasagna noodles, broke into 2" pieces - or any pasta shape, I will sometimes use Malfalda.
  • Fat-free shredded mozzarella - Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
  • Toppings (optional):
  • Grated Parmesan, for garnish
  • Torn fresh basil, for garnish

FAQs

Why does lasagna get soupy? ›

The sauce could be too watery. The noodles can be holding on to water. The vegetables are releasing excess moisture. If you are using ricotta be careful of the moisture it can add.

How to thicken up watery lasagna? ›

Cornstarch is a classic binding ingredient that won't affect the sauce's flavor and is much more effective than flour. It thickens sauces and soups by inflating in liquid the same way oatmeal, rice, or any other starch ingredient does, absorbing it in the process.

How to reduce lasagna sauce? ›

Cook It Down

Reducing is a classic cooking technique. It means bringing the sauce to a boil, reducing the heat, and letting the sauce simmer gently until it reaches your desired consistency. That might be 20 minutes or an hour—perhaps even longer.

How to stop lasagne from being sloppy? ›

How can I keep lasagna from being a mushy mess? The best way is to keep your ingredients dry. Cook your pasta sauce long enough to boil out most of the moisture so the sauce is thick.

Does fresh mozzarella make lasagna watery? ›

Most people use low-moisture mozzarella in lasagna, and I am no exception. Fresh mozzarella tastes phenomenal in lasagna; however, the extra moisture will make the lasagna a bit watery. Sometimes I'll use bagged, shredded mozz in the layers but then will splurge for the good stuff on top.

How to make lasagna firmer? ›

Use the oven-ready (no boil) lasagna noodles. It absorbs some of the extra liquid released from the cheeses and sauce and keep it firmer. Also, do NOT use part-skim mozzarella or ricotta - use the whole milk versions.

How do you get excess water out of lasagna? ›

Pour off as much of the liquid as you can into a small saucepan, and boil it down. When it's reduced, pour it back over the lasagne and stick the whole dish back in the oven for 20 mins, maybe with some extra cheese grated on top.

Why is my zucchini lasagna watery? ›

You may recall from my zucchini noodles post that zucchini is 95% water. That means when you cook it, it will naturally become watery. But if you're looking to have a little less juice in your lasagna, I do have a few tips: Slice your zucchini into thinner slices: Thinner slices mean fewer zucchini, thus less water.

What can I use instead of tomato paste to thicken? ›

For every 1 tablespoon of tomato paste needed, use 3 tablespoons of tomato puree or sauce. Add the puree or sauce in place of the tomato paste and cook, stirring constantly, until the puree or sauce has reduced and thickened. You'll have a similar deep, savory flavor.

Should lasagna sauce be thick or runny? ›

So, to achieve the perfect lasagna, the consistency of the sauce is absolutely essential. Both the ragù and béchamel sauce should be dense and creamy. Avoid sauces that are too liquid and slide to the bottom of the dish. A thicker consistency of the sauce will allow the pasta to be flavoured in the best possible way.

Can you put too much sauce in lasagna? ›

The number one reason lasagna turns out soupy is, quite simply, too much sauce. There is such a thing as too much of a good thing, and this is it. To avoid baked lasagna swimming in sauce, use enough sauce to cover each layer but don't go overboard. Wet ingredients are another reason lasagna turns watery.

How do you make lasagna stay firm? ›

Just like steak, you need to allow the lasagna to rest before slicing into it. Resting or letting it cool for a good 10 to 15 minutes at least allows the heat to dissipate, the ingredients to settle from its bubbling state in the oven, and firms up the cheese that you added on top.

Why is my pasta sauce soupy? ›

This could happen when you add too much pasta water into your sauce, and you accidentally drown the thick sauce with the starchy water (happens to the best of us). I find that this happens to me most often when I'm making quick sauces, like a meat sauce or light marinara that hasn't had the time to simmer.

How do you keep the top layer of lasagna moist? ›

And finally, to avoid your lasagne drying out, cover the top with foil while it's baking, then remove it halfway through so that the top can brown nicely.

What happens if you layer lasagna wrong? ›

10 Most Common Lasagna Mistakes

There shouldn't be too much or too little filling. Too much between one layer and another will keep you from ever getting a perfect slice. Too little and all you'll taste is pasta.
